Banquet event order (BEO)

The venue's working document for an event: timeline, headcounts, menu, service style, room setup and staffing.

Also called:BEOEvent order

Definition

A banquet event order (BEO) is the document a hotel or venue uses to run an event. It is usually a few pages that set out the timeline, guest counts, menu and courses, service style (plated, buffet, stations or passed), bar setup, room layout and table settings, audio-visual needs and the staffing plan, plus any changes agreed after the contract. The kitchen, the banquet captain and the setup team all work from it. Temporary staff need the parts that affect them: arrival time, dress code, service style and the timeline. Send those pages with your order so the crew arrives ready, instead of being briefed at the door.
